The Pizza Margherita is named after Queen Margherita, wife of King Umberto I. during their visit to Naples in 1889, she was offered the local specialty: pizza. The pizza with tomatoes, mozzarella and Basil was her favorite and has borne her name ever since. The reference to the Italian flag (red, white, green) will undoubtedly have contributed to her choice of this pizza.

Currently, America is the country where the most pizza is eaten by far. The largest international pizza chain is Pizza Hut with more than 12,000 branches in ninety different countries – but not in Italy. The Italians themselves are in second place in terms of pizza consumption, followed by Canada.

You can argue about the origin of the pizza forever. In fact, it is a flat bread and has been baked in many cultures for centuries. But the pizza as we know it today – round, with a rim, tomato sauce and/or cheese – comes from Naples. It was already written about in the seventeenth century. At that time, pizza was streetfood for the less fortunate.

Create Pizza oven with Sprocket Wood , close the door above 100 degrees to raise the temperature. In the beginning, fire well above 300 degrees, preferably to 350 to 400 degrees.
Make sure that the wood is level or just above the heat shield, and refill Wood in time.

Baking takes only 90 seconds at 350 degrees, around 2 minutes at 300 degrees.

Remove 1 or 2 boxes of bulbs +/-10 to 20 minutes before cooking.

Allow frozen pizza balls to thaw 5-6 hours before use in the included dough trays. However, cover with a lid or with a wet kitchen towel otherwise the bulbs will dry out. Slightly moistening the bulbs with water also works well against drying out.

It is best to store the bulbs in the refrigerator, preferably as cool as possible. You can typically store frozen bulbs in the freezer for 6 months.

After your last baked pizza, spread the wood(cabbage) over the oven floor. The floor Burns nicely clean this way and you don't have to brush or scratch.
Another great method is to bring the temperature to the 350 to 400 degrees by means of an extra wood on the fire and keep the door closed. In this way, the floor also Burns nicely clean.
